Looking for the name of a PSX game when you play as a ninja defeating enemies in 3D style. I know it's not Goemon but it's pretty similiar, it also plays similiarly to Rockman Dash/MegaMan Legends.

This is a long shot as I don't think the game is THAT forgotten but maybe it's Brave Fencer Musashi.

Well since this is here, honestly as of late I've had the experience of remembering this weird, kind of simulator for the Nintendo DS if I'm not mistaken. It was supposedely about using a sort of radar too take down planes while you're in an aircraft carrier. I don't remember anything else, aside from the fact that the game had this black and orange radar, and the top screen? I don't properly remember... It may be a hard search, sorry, but I just kinda remembered it.
Not much to go on but I'll give it a go.

Nope, it didn't had any visual clues in a way... I don't wanna think it's lost media, because I remember clearly that there were some 8 bit animations or something when you caught what you needed to get(?)
I'm sorry that I don't have much information, but I do recall that maybe it was more like a strategy simulation kind of thing. And that you were carrying planes in an aircraft carrier.

Searching for aircraft carrier games tends to bring up old DOS stuff, Steam games and some random title for the Switch. I actually found something. In all honesty it sounds nothing like your description but it's the only DS game I came across that puts you in charge of an aircraft carrier so I'll post it.

A thread of remembering a game from your past, eh? Well this might be extremely hard to describe...

All I remember is a GBA-Like game where it's like blue and yellow-ish, and there were chickens involved? This was wayyyyy back in 2010-2012 ish, so I probably might be thinking this might be something I've dreamed about. I think it was also a Puzzle game?

I'm doing this post as i have the memory of an decreprit alligator and searching for a PS2 Game that i never actually could play before but always wanted to play.

By that i mean that it was only a demo on those PS2 Discs but even after searching for all youtube videos for every game kinda i couldn't find it (sadly).

So the level of the game started like on some Antartic/Snow/Ice biome where you could switch form by being a normal human then turning into a kind of big monster.
The Character was playable in a 3D type of way.

Ps : I know that the description is really weird i was a still a kid and my memory is a bit vivid about that i understand if it's difficult to find have a nice Day/Night

well, at least the demo disc thing sort of narrows it down. he might be mixing it up with a video on one of the discs. not likely, but possible. but i have found anything on how many games have demos for the ps2 yet.
 
There was also a game named Shifters that lets you shapeshift into animals. I associate demo discs with PSX rather than PS2 and PS2 was capable of playing those so maybe it's a PSX game we're looking for? I think there was an Animorphs game that could fit the bill.
