They should continue what they started in Mario Kart 8 and add more non-Mario Nintendo characters.
Link, the Inklings, AC villagers and Isabelle were a great start but lets ditch the name "Mario Kart" and turn it into "Nintendo Kart"; like Smash Bros but a kart racer. It opens up so many more possibilities for new weapons and track designs too. Maybe even add unique abilities for each racer.

I wouldn't mind if they retired the Metal and Gold characters since they are essentially duplicates of the original characters, just with a chrome or gold look.
Do you mean like instead of the star it should show a border wall in the item slot?

It's easy for Nintendo to bite around like a mad dog because they never had to contend with a bigger dog than themselves. Hopefully they'll make a mistake at one point; I want a VIP seat to see that unfold.

Most people don't play all those spoof ROMhacks like Super Loco Cart or Pussy City Pimps.
I play a handful once in awhile, mainly for the lulz, but also to see if any substantial changes were made.
