What did you eat today?

Grilled chicken burger, not the one in the image but more or less the same, not quite as big, and some Cayenne pepper fries.
they are more or less double baked fries, after baking are coated in a cayenne pepper batter, like onion rings are and then either baked or fried.

I always get the double baked ones because I don't like fried foods.

That actually looks really good. I might do the same tomorrow night for the partner and I. We like fajitas, but it takes forever to bake the chicken for them. Neither of us likes or eats fried foods.

And honestly, as much as we use our crockpot, I almost want to kick myself in the ass for not thinking of that ::sailor-embarrassed

I've gone through many crockpots, though everytime I need 'em, they're nowhere to be found.

Also this:

▢ 1 lb Fettuccine Pasta
▢ 6 Tablespoons Butter
▢ 1 Garlic Clove (minced)
▢ 1 1/2 cups Heavy Cream
▢ 1/4 teaspoon Salt
▢ 1 1/4 cup Shredded Parmesan Cheese
▢ 1/4 teaspoon Pepper
▢ 2 Tablespoons Italian Parsley (optional)


Start by bringing water to a boil in a large pot. Add salt to the water to season the pasta. Once it is boiling, add pasta and cook according to package instructions.


Saute the garlic and butter together until softened — about 1 to 2 minutes.


Add heavy cream and let simmer over medium-high heat for about 5 minutes to thicken. Add salt and pepper to taste. Add half of the parmesan cheese to the mixture and whisk well until smooth.


Save some pasta water. The pasta water is full of flavor and can be used to thin out the sauce.


Toss alfredo sauce with fettuccine pasta and add half of the parmesan cheese. Once it is tossed, garnish with the remaining parmesan cheese. Add a little pasta water if it needs to be thinned out.


Garnish with Italian parsley, if so desired.

I have made this or something similar to it. The crockpot I have is one my grandmother owned, and it still works. It has that tacky 60s flower design, but it has outlasted three microwaves and a gas range. And again, I have made something similar, if not the same thing, and it is delicious.

Fettuccine Alfredo
Stole the recipe, made it a couple weeks ago, pretty decent.

Also, French Toast:
▢ 4 large eggs
▢ 2/3 cup milk
▢ 1/4 cup all-purpose flour
▢ 1/4 cup granulated sugar
▢ 1/4 teaspoon salt
▢ 1 teaspoon ground cinnamon
▢ 1 teaspoon vanilla extract
▢ 8 thick slices bread

Preheat griddle to 350 degrees F or or heat a skillet over medium heat.

In a blender, add the eggs, milk, flour, sugar, salt, cinnamon, and vanilla. Blend until smooth. If you prefer whisking by hand, start by mixing the flour and eggs together in a shallow dish, then whisk in the rest of the ingredients until combined.

Dip bread slices into the batter, dredging them well on both sides, and place on hot, greased griddle or skillet.

Cook for a few minutes, until the bottom of the breads starts to get golden brown. Flip and cook on the other side the same.

Remove to a plate. Serve warm with syrup and a sprinkle of powdered sugar.
 
Sweet Chili and chicken wraps with baked cheese and onion crisps and for later tonight a ristorante cheese pizza with fresh tomatoes.
 
Baked a cake Saturday (using box mix), but I forgot to add sugar or vanilla cause I was distracted (on the phone with my mom). She had wanted to pick something up from a new restaurant she had heard about, but it wasn't open yet, so she just went to Publix and pick up a bunch of stuff. A sandwich, chicken tender for me (they were out of potato wedges unfortunately), potato salad, pasta salad, a few flavors of popcorn & some flavored lemonades and teas.

We stayed at the house yesterday so I just made a bacon and egg sandwich for my mom & had beef hash and eggs myself. I also made a frosting for the cake to try to save it. I woke up late today, so all I've had is some cheddar rice crisps and water.
