Say I were to start a PS3 game on my PS5 thru PS Plus, and then eventually I get the game for my PS3 proper. Would the achievements from the PS5 version carry over to the PS3 version?
Are you referring to the streaming of a PS3 game to your PS5, or a port/remaster of the game to PS5?
If it is the streaming one, then yes. You are playing an actual PS3 game and your save data is all backed up to the cloud. As long as you download your save data to your PS3 console, you can pick up where you left off. (You can actually just sync trophies to your PSN account by opening the PS3 menu and going to the trophy page right there from the streamed PS3 game, if thats all you worry about).
If its a port/remaster, then no, as the PS3 version and PS5 version are two separate games in the PSN library for most cases

For clarification on this, I do not have a PS3, all of the "PS3" games listed under my trophy progress were played via the PS Plus streaming service. MGS4, GOW1&2 remasters, MGR, Sonic Unleashed, all of these games without next-gen versions got synced to my PSN through the streaming service as its all done that way.
