i'm a real sucker for weird ports of games, and i really wanna check out the sega CD / PC engine versions of Shin Megami Tensei, but they're stuck in japanese unfortunately. i know they'd never get translated since there's already three perfectly good fan translations of SMT1, but its still fun to think about.
as for games that don't have a fan translation at all, Fuku Fuku no Shima for PSP comes to mind. it's something i downloaded randomly when i saw it on CDRomance a while ago, funnily enough, and from what i can tell it's a sort of animal crossing type game? i don't know a lick of japanese so i was stumbling through it, and it was hard to tell what exactly it was going for. it seems pretty cool and unique, though, and it must have done something right since i believe one of the default options for a PSN icon on PS3 is the bird character from that game.
another one that i've always wanted to play was UFO: A Day In The Life for PS1. it's made by love-de-lic, creators of moon: remix rpg adventure, which in turn went on to inspire the likes of Chulip and even Undertale. similar to Fuku Fuku no Shima, i actually managed to get a decent way into UFO without knowing japanese, but got blocked hard by one part way later on. it's a game where you take pictures while observing little viginettes of random peoples' lives to catch invisible aliens that are affecting their environments. once you snap a photo of an alien, you capture them and take them back to your ship. it's sort of like pokemon snap, but a LOT more focused on the individual creatures than just getting the best shot. i also think you're supposed to snap photos of the creatures while they're doing something specific? again, i had to figure everything out without the text explaining it, which lead to me getting really stuck on this one swimmer alien.
