I personally really enjoy the extra content from Superstar Ultra: Meta Knightmare Ultra was a fun campaign and ended with one of my favorite bosses in the series (Galacta Knight). idk to me it was very tedious having to play the whole game again with Meta Knight which is basically sword kirby with a few extra skills. Helper to Hero was pretty meh too. Revenge of Dedede was probably the most interesting of then, which is basically a hard mode of Spring Breeze, but with plenty of additions including Kabula from KDL1. While it's probably less of a selling point today, Superstar Ultra was also portable compared to the SNES original, which was a huge upside for me when I was playing it as a kid.
While the new modes included in the game weren't the most groundbreaking additions, I still think that they were neat extras added to an already great base game.
I nearly forgot, Masked Dedede was introduced in Superstar Ultra as well! I always loved his remixed theme, too!
