Alright, it's been a while so it's hint time: It is indeed Serious Sam from Wish. It's a PC exclusive developed in South Korea and released in 2004.

Also, a masterstroke of vague hints - Vin Diesel.

Googled that out of curiosity and it seems that the actual title is Iter Vehemens ad Necem. The Cathedral thing is just a group of people playing the game by the looks of it.

That's the name of the game's homepage, and not the game itself. But it's close enough that I'll call it solved.

The game is "Iter Vehemens ad Necem", or IVAN, a Freeware rougelike that was semi-popular in the 2000s.
