i dont mean just doom 1 or quake 1, i mean comparing both series as a whole. which do you prefer? ive never really meshed with doom, but quake is my lifeblood. quake 1 is absolutely one of my favorite games of all time, it's so fun and looks so cool and has tons of excellent enemy designs and fun weapons, i can never get my fill of it. quake 2 is a lot more boring in terms of aesthetics, however i think the super shotgun of q2 is seriously the most satisfying weapon ive ever had the pleasure of using in any videogame, and bhopping in that game is so easy that you can blast through areas at the speed of an f1 car. quake 3 arena may not have a real singleplayer, however it makes up for that by having some of the most fun movement in any shooter, and also being the only deathmatch game that i actually find myself able to enjoy. plus, i think i have more time in the defrag mod (which is all about going fast through tricky obstacle courses) than the original game of quake 3, and that really scratches an itch for me. quake 4 kinda looks like ass but i can't really knock it till i try it, i suppose. i know there's also quake live, which was my introduction to the race mode/defrag style of gameplay for quake 3, so i'll give it credit for that. quake champions also exists, but it doesnt have orbb in it so i don't give a shit. there's also enemy territory quake wars which... looks like a videogame alright. i'll admit, the quake series goes all over the place, but i kind of love that about it. it's cool getting to see how wildly different each game is from the last, and if i dont like one of em, i can always just play the ones i do like.

DooM! Specifically classic DooM 1 and 2
DooM 64, 3, 2016, and Eternal are all decent games, but none of them are even close to the caliber of classic DooM. The main appeal for me is meta content - these are not just good games, they are amazing engines with 3 decades of love and attention poured into them. I cannot gush enough about the incredible classic doom community and the resources available for people who like getting involved in that sort of stuff.
You got software speifically made for fan content. You got channels like Decino breaking down all the mechanics. Doom is responsible for getting me personally into coding and doing sprite work. I'm going to be playing Doom content for the rest of my life and I swear it's never the same thing twice. Literally every few months or so somebody drops a crazy WAD or MegaWAD that completely shakes up the scene.
In my mind it comes down to perspective. If DooM to you is just a game from the early 90s with 30ish levels then yeah, Quake is superior but DooM to me is far more than just a game in a way that Quake just cannot compete.

DOOM feels somewhat more consistent of a series, even when it pivots a bit more into the slower horror angle of 64 and especially 3.
The first Quake's baseline gameplay and feel is something I probably would take over most of DOOM, but the series as a whole loses a ton of its appeal once shifting to bog standard scifi.

If Specific Games then Quake for sure but comparing the whole series is kinda unfair honestly.

Considering technically speaking the most recent Quake is well 4 and while with Doom we're gonna get a Mecha to fight some Demon soon.
