PC DOOM or Quake?

Quake.
No doubt.

For what it did in First person 3D adventure games is basically the same SM64 did in third person 3D adventure games (the very same year): Be "the master" the other developers could use as the gold standard, something the industry needed desperatly in the early 3D games era (mid 90s).

Before them, those type of games were very different, or even experimental, and nobody ended to copy them.

Doom, instead, was not a "complete 3D" game, but a VERY enhanced "Wolfenstein 3D". Although it is a great game, and during years people called the "FPS" genre as "Doom type game". So... VERY important game for the FPS genre.

I like Doom modding but sometimes GZDoom exclusive mods are getting a bit boring because it misses a bit of that "vanilla-ness".

Also a nice modpack for Quake released recently

The Quake Brutalist Jam 3 can also be played with a standalone download using LibreQuake. So you can play even without owning the game. Give it a try if it looks interesting to you.

I'd love to see indie games taking more from Quake-Unreal than 2.5D Doom and Duke 3D soon.

I'd try LibreQuake someday.

Doom as a whole. The only Quakes I've really enjoyed are II, 64, III, and IV. III have I not played since the Dreamcast and PS2 era. I don't like Doom Eternal, and still have not gotten to Dark Ages. Nor am I still interested.

Doom. I load it up and play through Doom 1 and 2 a couple of times a year. Quake was never as accessible to me, and as a series, isn't as consistent thematically as Doom was. I didn't like the shift from the Lovecraftian world of Q1 and scrapping it for the Strogg in Q2. Q3 Arena was great, but I used to mostly watch my Dad and uncles play it.

While i like Doom , i prefer more towards Quake , especially only the first one .

The bio-mechanised monsters from Doom are really great and make those demons from small evil devilguys into a horrific force you dont really wanna deal with overall . Especially Doom 3 . Doom 2016 & Eternal & Dark Age rather destroyed that aspect and made those demons and zombies into push-overs but its another approach that isnt bad and gave Doom its action-side a great push again . But im rather burned out by Doom .

I prefer the eldritch monstrosities and weirdly twisted places from Quake more .
The fast gameplay and the rather primitive weapons-roster with those needle-guns , the shotguns , lightning-gun, grenade- and rocket-launchers a nice stable with a focus that are more brutal-on-point without some really useless pea-shooters (except the axe which is truly useless) .

They could expand that eldritch horror approach but when the second game arrived it was more typical Doom-boom-shoot with Quake mobility . Still like the game but not the same as the first one.
