I rarely watch anime, and when i do i tend to watch longer animes. i want to kinda expand on my anime knowledge, im open with watching anything. so what is your go to rec for a novice anime watcher?

For deep psychological anime: Neon genesis evangelion is a classic, it is filled with great characters.

I like the character development in sword art online.

I havent seen that. But I highly recommend the anime.

Code geass, blue gender and full metal alchemist are good animes too.

To be fair, there are some very anime-esque themes in South Park. Okama Gamesphere, Chinpokomon and Good Times with Weapons are anime enough ::winkfelix not to mention Kenny being an anime princess in one of the later seasons.

You forgot about the "Tweek x Craig" yaoi episode.
 
When you get that itch for some good fantasy, be sure to also check out Moribito - Guardian of the Spirit as well as The Twelve Kingdoms. Extremely respectable shows & they set the bar pretty high for the genre.
 
I'd rec most of the popular ones but here's the ones I always go back to, though you should continue with the manga on most of these.
