Horus, Prince of the Sun is about a decade older than I am. Several people who went on to work on Ghibli films worked on it. When I watched this movie, I thought "this was an amazing moment in animation history." There's talking animal friends right out of a classic Disney movie. There's also an external conflict which reminds me of shonen demographic storytelling. The movie has pacing issues, but I recommend it regardless.

Most of the anime I like are from the 80s and 90s but if I could choose only one, I would say Martian Sucessor Nadesico.

It is THE 90's anime for me

The OP is also a banger

I have been slowly watching Tenchi Muyou so I can say this is one. Another that comes to mind is a variety of UC Gundam anime be it main or side stories like 08th MS Team and Stardust Memory.

Yuu Yuu Hakusho, Trigun, Initial D, Slam Dunk and GTO are some of my favorite retro anime series off the top of my head.
