...and I'm playing through Final Fantasy VII right now and enjoying it as much as I've enjoyed these games, now starting Disc 2. We'll see how it fares over time.

I know this is a basic answer on my end, but these still play great.

If I'm going off early childhood memories alone it would be Final Fantasy VII and Crash Bandicoot, even though I didn't get that far in either of them at that age, couldn't beat Ripper Roo and my reading comprehension wasn't good enough to figure out how to catch a chocobo to pass the Midgar Zolom. Have gone back and beaten them both in the years since though.

Played a lot of classics that absolutely earned their place in history since then too, Silent Hill, the first two Resident Evil games, the first Metal Gear Solid which I'd never actually beaten myself only watched others play it. Such an amazing console.

Also worth mentioning that some of the sports games became very good during that era, NHL, Madden, NBA and even FIFA. There was still a great competition going on between several companies like EA, 2K Sports, ESPN or Midway with their funnier Blitz and Hitz games.

My favorite PS1 game is Final Fantasy IX. No question. It’s my favorite RPG ever made, being a perfect example of what the system could do at the end of its life, while presenting a world filled with memorable characters, very honest writing, tons of things to explore, and a political thriller of a storyline (kind of. Sort of. I liked it. :3)

Other favorite titles for me are Vib Ribbon, the entire Ridge Racer lineup, Spyro the Dragon, Jumping Flash, the entire Namco Museum line, TEKKEN 3, Klonoa: Door to Phantomile, Mega Man 8, Mega Man X5, LSD Dream Emulator, Resident Evil 2, and more!

Best part of PS1? You can have a AAA title and a weird, experimental, low budget title on the same shelf and they feel perfectly normal next to each other. PS1 was a weird, lovable, professional, and majestic console that is one of my favorites.
