Touhou is music albums masquerading as games. They just happen to be the only good bullet hell series, hard carried by pure waifuism.

Just curious, can you consider yourself a Touhou fan if you enjoy the characters, music, manga and other fan-made Touhou content but never actually played the games??

I discovered Touhou music by a random YT vid, and since them I've been hooked.(Necrofantasia track is my fav)

I don't think they mind lol from what I've seen around the web, it’s kinda a common joke anyway, most usually only know IOSYS anyway.

It's mostly just a meme or inside joke in the fandom, as a lot of fans are more into the fanmade stuff and side content. You'll be fine as long as you're okay with some ribbing.
