Fun fact, the first time I played Dark Souls I had no idea how leveling worked and put way too many points in resistance thinking it would help for Blighttown. I still somehow beat Orstein and Smough with that character before restarting.If you level dex, how will you have room in your build for resistance?

I had the fortune of having played Bloodborne first, and having @Nidoking and @King Koopa around to tell me resistance was pretty much useless and not to bother with it, so luckily I avoided that problem all together
I usually end up going Quality. I love my Claymore so, so much.
I always like switching up and using multiple weapons in a playthrough, so I usually go quality for that. I kinda like having something like an Uchi or Rapier for speed paired with a Greatsword or Great axe for heavier stagger. Plus, I just like roleplaying as a "Weapon Master/Sword Saint" that can use anything.I tend to go for a strength/pyromancy build. At least, for a first playthrough. (Though in Elden Ring so far it's been less pure pyromancy and more madness and pyromancy, and I went quality in Bloodborne.)
