I’m a bit of a Gundam fan so probably the whole meta series is in my list and then there’s:

Based on the videogame with the same name. The story it's about the life of Brandon Heat and Harry MacDowell and how power, personal beliefs and ambitions destroyed their friendship. The story is basically what happens when You combine the horror part of Resident Evil and the mafia part of the Godfather and the result of that it's one of the best anime ever made. One that without a doubt by the end it's going to make you cry.
Second this. Gungrave is my favourite of all time... Along with Berserk 1997.

For the most part, the animes I've really gotten into are pretty conventional. One Piece, Chi's Sweet Home, Cowboy Bebop, Bleach, Dragon Maid, FLCL, Devilman, etc, etc...

Some I think have kind of been forgotten with time that I can definitely recommend, though...

Beastars is my favorite by far, the characters feel really grounded and the story is compelling. The music is also phenomenal and the art style is nice to look at, though it’s certainly not for everybody. Disappointingly though, people tend to disregard it because it’s about anthropomorphic animals and the few risqué scenes that exist.
