What anime/manga changed your taste?

Oishinbo. It changed my tastes...literally! This is a very informative manga even moreso than other cooking manga when it comes to food. Most of the food information is Japanese but some issues do feature western cooking. I'm interested in sampling the little known dishes featured here but unfortunately, most of them can't be found in local Japanese restaurants. But every now and then, I find some of the food featured here in some place I can afford and my dining experience is greatly enhanced...sometimes while re-reading this comic again with my phone.

More often than not, I find myself eating my meals in front of the computer while reading this...along with other favorites like Mister Ajikko, Cooking Master Boy (aka Chuuka Ichiban which features Chinese food mostly) and Shokugeki no Soma(Food Wars).
 
Positively, and really early on:
Kino's Journey (2003) - It dodged the mostly common tropes, sexy girls (and boys) fanservice etc. everything for a grounded, philosophical journey that still instills unnerving calm that is soothing as it is bothersome somewhere in back of my neck.

Negatively:
Sword art online. I kinda realized some stuff is just overhyped and slop of some highest order. I been less of "just ignore the bad parts and enjoy it regardless" type of guy after SAO.

Made me enjoy a genre I did not seek out or particularly enjoy:
Patlabor (Movies), Tengen Toppa Gurren Lagann / Mecha. I generally did not and still do not care about mecha as something I would actively to seek out and watch, but the appreciation for mecha in Patlabor movies and Gurren Lagann makes me generally more receptive to mecha than I would be without them.

I've started the manga and a bit the anime too last year, I love the stories and the characters and their dynamics, especially that homeless dude who help the mc and of course Yuzan (who share some similarities with Yujiro from Baki to be honest).
 
Fate/stay night (visual novel), and I imagine it would be for many other people too. It didn't only change my taste, it literally changed my entire life as well.
 
100% JoJo's Bizarre Adventure, then I would say Berserk right after.
