For me personally it's either Gundam 0079 or FLCL. They got me to get out of my bubble of whatever was popular and actually explore the medium. It also helped me through a rough spot of my life.

It's hard to get into the right mangas. Moreso started reading manga to anime that didn't quite feel right. These included Claymore and Full Metal Alchemist (Both awesome by the way), but i could see not only what hadn't been released as anime but also what they changed.

Beyond those two series i've finished, Korean Manga seems to be a better fit.

Before we go further.

US (comicbook): Drama drama, fight fight, soap opera cliffhanger. Often too chaotic unless you're s big fan.

Japan Manga: Decent story decent pace, bit cliche after a while (especially the selfless hero trope). Also has more Ecchi stuff from what i've seen which can be a big draw.

Korean Manga: Less timeskips, but major events are concentrated on, and far more character/game development. Often game oriented with blue transparent windows giving semi-fourth-wall-breaking-info. While good, seems to be more serialized and drags on after a while.

Chinese: Slice of life every day must pass by in the manga and it drags on after a while. Also heavily censored.

At present my favorite mangas kinda dictate my current tastes.

The skeleton that couldn't protect the dungeon: I've always enjoyed time-loops of some degree, and growth, while also exploring a world completely new to him and the reader. Really good stuff, some of the best writing i've ever read.

Harem in a Labyrinth in another world: A mix of isekai, game mechanics, as well as hentai, the character acts like a real person and you don't get blue-balls because four girls are hitting on the character and he puts them all off because he doesn't want to risk something.

Others that catch my interest involve powers of some description, Solo Leveling and Auto-Battling through my clones are decent too.

Probably Durarara when I was like 12, that was back when it was still good though. Did end up watching what I thought to be lesser-known stuff (xxxHolic, etc.) afterwards.

Mob psycho 100 helped me so much during hard times and inspired me to become a better person

JoJo made me realize how much I love eastern media with western influences. It is THE gold standard to me in any medium.

Monster.
I remember stumbling upon Monster back when I was twelve or thirteen and it genuinely blew me away. I'd never read anything as grounded, dark and intriguing before that and it definitely changed my taste in manga (maybe not changed but most definitely shaped).
Love the anime, too.

What's your favorite part? I'm guessing it's part 4 from your pfp. Part 4 and 6 are my personal favorites

Yeah Naoki Urusawa's work in general was very influential on me. Billy Bat and Pluto a little more than monster

I hadn't read Billy Bat yet. I'm going to sooner or later.
But I love Pluto, too. Both the manga and the anime. Such an amazing piece of work. And short, too.
20th Century Boys is another one of my personal favorites.

You need to read it, I think it's his most unique main work. I read 20th Century a couple years ago and loved it!! Definitely due for a reread. I would collect the manga but I'm broke so Imma stick to Pluto volumes lol.

Probably one of his most underrated works! Barley see anyone talk about it, which is weird because I feel like it's not a hard read.

I read Real during a very very difficult time in my life. Not only did it change me as a person, but it changed my entire taste for manga.
I will always cherish every single day and every single moment of my life because of this manga. I won't enjoy it as my last, because I know I have more moments after this one, but ill be thankful to be alive and to experience life itself.
Doomer manga/anime for the sake of being "muh depressing" will never be enjoyable anymore for me. Life is just too beautiful, and living is worth too much.

Probably Banana Fish and Lone Wolf and Cub. Before that, I was all in that Shonen "HADOUKEN" Universe. After those 2, I wanted more grounded, adult themed series. I also got into Osamu Tezuka's mangas with the religion, and philosophy. Phoenix was phenomenal, his greatest work which he never got to finish because he passed away during it's run.

Devilman changed my life

I can't imagine my teen years without Devilman

thanks to Devilman, I'm now a Go Nagai fan as after I readed it, I started to read its sequel Violence Jack(I finished it because is fully translated in Spanish and yes, I'm re-reading the manga in English and following the updates as I love that has better scans and color pages compared to Spanish translation), Cutie Honey, Enma-kun, Mazinger, Getter(co-creation with Ken Ishikawa), Shutendoji, Susano-Oh and other Nagai stuff

My early anime were a combination of 80s-90s dark and edgy anime (Akira, Vampire Hunter D, Manga Entertainment stuff, etc) and fighting shonen stuff (Street Fighter, Fatal Fury, DBZ, etc). There wasn't any one anime that changed my tastes, but I think after watching Ghibli films (notably Princess Mononoke and Spirited Away), and seinen series like Welcome to the NHK, I realized I'd rather watch that kind of stuff more often than what I used to watch. Don't get me wrong, I haven't completely given up on those old genres (still watch JoJo when a new season comes out), but they aren't what I usually gravitate to.

I used to taste a lot of chocolate, after watching Naruto I started to taste a lot of Ramen. Life changing experience.

Not a specific anime, but the way I pick what I wanna watch helped me broaden my taste.
Instead of cherry picking from list of available animes, I take a look at my favorite creators, see what they've been working on and go from there, I frequently found a hidden gem or two as well.

In my case it was FLCL because of it's message of finding your own path instead of trying to fill an empty space or someone fellings.

There's no manga that changed my entire tastes, but I remember that when I first started reading Blue Spring, I thought Taiyo Matsumoto's art was bad. I didn't like it at all. Somewhere along the way I started to accept it, then I read Tekkon Kinkreet and grew to really like it. By the time I read Takemitsu Zamurai I couldn't get over how good the art was. It just clicked hard. More people need to read that btw, really great series.

Texhnolyze (TV Series 2003) - IMDb
For the record i'm a type of person whose inclined to try to experience any other works an Author may have after i finished with one of their works, for example i get to know Ansatsu Kyoshitsu because i read Majin Tensei Nogami Neuro.

And that's also how i get to know Texhnolyze.

Ngl, as much as i like this Anime and the Symbolism it provides which pretty much forces me to consume the Medium in a more slower methodical pace and more immersing myself in it.

Holy hell was it an actual slog to get through, but nevertheless it changes not only my taste to some degree but also my approach towards any Anime afterwards.

I’d say gurren lagann. It introduced me to the mecha genre and 3 out of 5 of my top 5 are mecha animes, those being gurren lagann, promare (movies count imo), code geass, akame ga kill, and fairy tail. It also inspired me to find animes with a lot of “hell yeah” action.
