I didn't see a thread for this so here we go! Talk about any stealth games here. Here's some that I think are great

I can share these titles and the console I've played them on:

Volume (PSVita) - loved every bit of it, one of the two game I've been able to stealth through
Aragami (Switch) - nice shadow mechanic but I'm not so good in 3d
Shinobido 2 (PSVita) - same as above (about me being not good), same cool ninja setting
Assassin's Creed Chronicles (PSVita) - three games in one, China, India, Russia, 2d with depths and gorgeous artstyle, loved them all (more than the other classic Assassin's Creed title I've also played) and got the trophies for a stealthy/no kills playthrough
Sniper Elite 4 (Switch) - same as the others in which I haven't gone stealth because I'm clumpsy, but still going stealth would be the wisest and best way to clear the wide levels, these levels are setting in Italy and are simply awesome, they look like little open worlds on their own

I played a lot of Tenchu: Shadow Assassins on PSP emulator a year or two ago

I also played a lot of Tenchu Z on 360 back in the day. Wish it was backwards compatible on modern Xbox consoles!
 
I have always found stealth games difficult, because in essence they're about timing and patience, and i often lack the latter.

For me - i still think the Thief series, and MGS is the high watermark. They make stealth the core mechanic that you really can't deviate from. There was a slew of games in the 90s and early 00s that sort of bolted on stealth badly as an option, when you ended up just shooting everyone in the face anyway.

Noble mention though to the Splinter Cell series. Also Commandos.
 
I would also add Syphon Filter (PSP, both titles) - enjoyed them a lot.

I have not mentioned Metal Gear because it's the most famous and obvious choice: I've played the two titles on Vita and the PSP ones but with a guide, left alone I would still be lost especially in the two on Vita.
 
No Hitman mention, yet? Silent Assassin is still my favorite game in this series. Anyway, I'd like to recommend something more obscure: 2Dark from the Alone in the Dark creator. It plays a lot like Hitman games but from top-down perspective. The story is absolutely bonkers and incredibly gory: you have to hunt down worst scum of the earth — pedophiles, cannibals, child kidnappers et cetera. Unfortunately developers signed to the one of the shittiest publishers ever— Nacon (aka BigBen) who threw them under the bus by forcing Denuvo (critics also weren't kind) so the game fell into obsurity
 
People already mentioned good ones so they didn't left me much to mention!!! lol

Then I would say:

- Dishonored 1: Gameplay without superpowers for extra fun!!!

- Hitman Blood Money: I played this game a lot to find all variations to kill targets lol.

- Splinter Cell Double Agent: I like its PS2 version. Spy - Super Soldier mix of stealth fun!!!

- Spy Fiction: It really added lots of necessary things to stealth genre like jumping top of the corners to hide yourself, but otherwise it's like the Japanese version of Mission Impossible in the context of stealth genre.

- Alien: Isolation: Stealth is better when all you can do is hide and avoid!!!

- Deus Ex 1: Choices matter and stealth is optional.

- The Saboteur: Open world stealth game but don't expect much, action is more fun!!! lol

- Medal of Honor (PS1 games): Their stealth missions were fun like making a soldier make a posture to take his photo but you kill him lolol.

- Prey (2017): Enemies do stealth more than you do!!!

- Manhunt series: Stay in shadows and ready your plastic bag!!!

- Little Nightmare 2: Stealth in art!!!

Top picks are:

Dishonored - (Its the Whalepunk immersive stealth sim of our dreams)

Styx: Master of Shadows - (kinda janky stealth spin off to some other fantasy series, but has major old school vibes about it. Love the main dudes attitude/vibe)

MGS3 - (Any stealth game that let's you go shirtless-zombie-face-Rambo mode when things go wrong is a winner in my book.)

Tenchu: Stealth Assassin - (A console classic that has a great atmosphere)

Yes, there is no other stealth game, let alone in any video game, you can eat giant snakes while you are naked lolol.
 
I only enjoyed Tenchu 1 and 2 when it came to Stealth. My play style is aggressive, so a passive approach for me is out of the question.

I love Deus Ex, but i would say that in general the stealth falls a bit into that 'we included it because it's what everyone else was doing' category. It's a game where stealth is an option, but it's far more fun to play as a walking tank - particularly when you've levelled up your rifle stats, and your bulletproofing augs.

Compare it to Thief where there is genuine peril if you are discovered, and it feels very different.

I think the way they implemented it in some of the later Deus Ex games was actually more effective. It feels like you can genuinely be a bit of a ghost - though again, the walking tank option is still there!

While we're talking about stealth options in FPSs, I suppose probably one could also mention the Far Cry series? I think the games walk a reasonably good line on allowing you to do combat, but also rewarding you for taking the stealthy route.

I agree with your message but I have a say about this particular part:

The whole point of the game is "choices matters" in the context of an immersive sim therefore stealth approach and not killing anyone matters a lot because it changes the way things are so stealth is actually a fundamental part of the game despite it's not forced per se. Since choices matters because the game offers you tons of choices naturally stealth becomes a necessary option for gameplay since what the game is about is not what was popular per se. Underestimating stealth of Deus Ex 1 would be no different than calling MGS series an action game because you can kill your way out easily lol.

Later Deus Ex games just add more options for action by keeping "tank + ghost" gameplay of Deus Ex 1, but they are not good at being immersive sim as much as Deus Ex 1 which they made the games "we really don't care about stealth but let's add it to don't anger fans" as if whole deal of Deus Ex 1 was stealth lol. In the end if stealth worths it or not depends on your satisfaction while for example later Far Cry games have ease of stealth action to clean enemies with combo kills. However I personally don't think it is a "good stealth game" if you have to kill people, I don't play stealth games to kill people nor I don't take stealth approach when it's available to kill people. If killing and being spotted is forced then no point for stealth. In Deus Ex 1 you can be just a ghost by not touching anyone which is satisfying for me, even have someone else kill others if someone has to die and all lol.
 
My personal favourite I think will always be Splinter Cell: Chaos Theory, that's the peak to me. It has everything you want/need for a stealth game; open levels, multiple ways to traverse the levels, physics-based sound travelling, some great environmental interactions like being able to cut through tents and do the classic Sam Fisher split jump. It's also well balanced between combat and stealth, where you can take out individual unaware enemies with your guns but if you ever get into an actual gunfight, you're going to be in for a very rough time.
 
I've never really been a fan of stealth games, but I did play the hell out of the original Thief, Metal Gear Solid 1 & 2 and the new Hitman trilogy.
 
My favorite stealth games are generally of the immersive sim variety like Deus Ex, Thief, Dishonored.
