Not car but F-Zero GX is just as amazing now as it was at launch, it's pure arcade perfection.
I would also say that Dr. Robotnik's Ring Racers (Sonic fangame) is worth trying, as a kart racer it can be way too complex and punishing at times and it isn't exactly very beginner friendly (it's the opposite of Mario Kart in a way, it's all skill and no rng), but if you learn the mechanics it's the most content rich kart racer out there alongside having a extremely polished presentation, (use passwords if you want to cheat some stuff like the hour long tutorial).
