There's nothing like returning to Gen 1 to make you realize just how brutal the leveling curve is and how welcome QoL changes can be. When it comes to Gen 1, I much prefer the original Green/Red/Blue version. Playing a character who essentially represents Ash from the anime, alongside seeing several other pivotal characters, alongside the temptation to use all 3 starter-mons sometimes feels like you are pigeon-holed into a certain playthrough.

That being said, Yellow Legacy features several welcome changes to set it apart from the original: Re-purchaseable TMs, increased bag inventory, forgettable HMs, availability of every Pokemon, Hard mode difficulty, expanded post-game, and a lot more! I remember finally completing the necessary challenges on Pokemon Stadium on the N64 in order to teach Pikachu on the Original Yellow version the move, Surf. Doing so unlocked the Surfing Pikachu minigame, a feature which makes its return in Yellow Legacy. Reliving that feeling made playing this ROM alone worthwhile! Playthrough's of Yellow version usually feel singular in their experience with Pikachu being your only option as a starter, and a central gimmick to the game. But the care that has gone into this ROM into rounding out this game's rough edges make the experience much more enjoyable.

I'm assuming you mean to say...hacks. Yes. I play alot of hacks and am actually very active in the pokemon hack community. You are asking the right human.

One thing to note though: color is going to be inherently limited in gen 1 no matter what. At it's best, it's gonna be mostly monochrome. There is no exception to this. I'm not a big fan of these legacy hacks but my personal favorite hack of yellow is Static Yellow. Check it out. It adds gen 2 sprites and more color than I have ever seen in gen 1. Still, what you're asking for isn't really a thing per se.

Gold and silver (crystal is my fave) were the first full color gameboy games. Yellow did add more color elements than red and blue had but it is still monochrome. This is also why gen 1 hacks aren't as common as, say, crystal hacks. Speaking of crystal, based on what you said you'd love Polished Crystal. Also Crystal Advance Redux (Redux gets updates almost every day). If you're interested in the scene at all though, check this out. Enjoy!!!
You are correct, I meant like a definitive hack of gen 1 that adds full colors (gb2gbc colorization hack) with quality of life improvements.

The idea is to try and get someone like me, a grown up who did not get into pokemon during the 90s onwards, neither the games nor the anime, did not even install pokemon go nor play any of the games (aside from a couple of spin offs) into the series without scaring him with more recent games with 500+ pokemons, just the first 150 pokemons for start to see if I can get into the series, I do have a soft spot for the simplistic graphics but mono chrome graphics may get old and tiresome for a long RPG.

As someone said there are multiple but also it depends what emulator/settings you use too.

These Legacy hacks by TheSmithPlays are great for people who want a close to orignal experience but want some QoL updates. There's also one for Crystal. I've finished the Yellow one and am currently playing through Crystal Legacy.
 
Heads up, screenshots are not from Yellow Legacy. YL has a different title screen and Eevee has a brown color palette.
 
I'm not very familiar with pokemon but how come there is no colorization hack for the original games?
