I wish the sonic franchise had as much spin offs as the Mario franchise
They literally have so many characters they could flesh out I don't understand why Sega doesn't do it
A proper Sonic RPG when the series was still cool would have been great. Like around the time of Super Mario RPG, maybe a late Genesis or Saturn game. Other than that, I disagree. Sega not just doing the same damn franchises over and over is one of the things I prefer them over Nintendo for.
Sega is often doing Sonic, Yakuza and Persona games around while barely remembering their older IPs.
Yes, we had SoR 4 then a new Shinobi game but how many years after? Sure they've finally announced a new Jet Set Radio, Golden Axe, SoR and Crazy Taxi game recently as well but we've waited over a decade (not counting mobile game spinoffs like the Crazy Taxi one).
And Nintendo is also bringing new IP to the table (Drag X Drive being one) as well as bringing back older IPs from time to time (such as Famicom Detective Club) so that's a bit disingenuous to assume one doesn't do what the other is also doing.
PS: Actually I'm tired of Sega milking Sonic and making spin-offs instead of bringing back older IPs would hurt more.
Persona is Atlus. Sega owns Atlus but it's still its own company that does its own thing under Sega, and it was mostly MegaTen since before Sega bought them.
Yakuza and Sonic are their two cash cows now so they have to keep them going. It doesn't change the fact that through their history they were always much more into doing the new thing than keeping every series going together.
They were apparently going to do this with grand plans for all sorts of Sonic-related spinoffs after the splash Sonic 1 made, but then the original Sonic died on Sonic 2sday after accidentally drinking bleach. Tom Kalinske hustled to find a lookalike, and that's why Sonic looks different in part 3. But he never quite got as much love as the original Sonic, and so when Spinball came out and was abysmal, the other spinoff projects were all done as tax write-offs for loss of income. Sorry.
Persona is Atlus. Sega owns Atlus but it's still its own company that does its own thing under Sega, and it was mostly MegaTen since before Sega bought them.
A second party company I understand. But then you could argue that Fire Emblem is Intelligent Systems, Kirby Hal Laboratory and Pokémon GameFreaks. Should second party games be counted or not?
Still: Persona is, above Megami Tensei, the IP that gave them quite a lot of funds to Sega.

Sega replaced Sakura Wars by Valkyria Chronicles but fundamentally both are strategy games with a focus on story. Shining as a franchise (including Force) got slowly eclipsed by Sakura Wars as well.
I'd also argue that despite using the same IPs you can see a difference between old Zelda games and new ones or even how much variety Mario as an IP has brought (the only series that kept it too safe and bland could be the later two NSMB games).
In fact people would rather see a comeback of older Nintendo IPs they haven't used in a while (like Kid Icarus). Same with Sega until recently with their announcement.
But we're digressing a bit there. Sonic having more spin-offs goes against what you said about wanting more novelty as well.

Yes, I don't want more Sonic spin-off, that's what I said. A RPG in the mid 90s could have been cool though.
Valkyria Chronicles isn't really like Sakura Wars, and neither is like Shining Force. You're playing it very loose there to make that point. And Persona is a Megami Tensei spin-off, so it's still MegaTen.
Okay, we can agree that these strategy game series are different but so are Nintendo platformer series or how several of their have evolved and changed through time.

WE want another Sonic Rush, a modern way of playing Sonic Advance + Battle, Sonic 3D Blast, Sonic R 2, and Sonic Labyrinth with Tails this time
Something along the lines of Mario RPG on the SNES would have been great. He could have similar jump and spin dash special attacks and transform into Super Sonic like in Breath of Fire 4.
Each zone would be it's own area and you'd have to collect the Chaos Emeralds to face Robotnik/Eggman as the final boss.

Not to mention Two Point Campus and Like a Dragon Sega keeps talking about all the time.
For Sonic Spinoffs, there's hardly no other spinoff to do. We have Spinball, Mean Bean Machine, the racing games, two fighting games, that random tennis game, a terrible party game, a terrible RPG game on DS, and the Olympics with Mario. Do we really want a Dr. Sonic, Paper Sonic or Sonic's Picross? Although, a Paper Sonic a new Sonic RPG with better story and gameplay would work.
