Hey there!
I come to ask you simple questions: how do you find a forum?
Do popular forums have to be about niches? Tied to a larger theme?
Are there search engines or lists dedicated to finding new forums?

These may seem like naive questions, because they are.
This place is my first proper experience with a forum that has a decently large community.

But anyway, what do you think?

I just type in whatever type of forum looking for and click each one to see what the activity level is like. I just typed in “video game forum” and ended up finding this one.

IDK I'm just old and grew up when forums were the primary community thing online so I just developed the ability to find and join forums naturally.

I can't explain how I do it, I just do it.

It just happens while looking for something else.

Depends.

Some Niche forums are popular, because they are the only ones which cater to that overly specific niche.
If you want a wide user base, it is better to go with a larger theme.
But, larger themes already have massive forums, so its all about what kind of community and environment are fostered at that point.

Are there search engines or lists dedicated to finding new forums?
Just use a search engine.

Normally a given subject will have a forum surrounding it.

We are a highly contradictory species - able to hate each other enough to vilify, yet gregarious enough that we have an instinct to gaher around common interests to discuss them (and possibly proceed to the vilification and hating in the near future).

I used to do that.

Some had advertisement/link boards to help you with that, but it's been a trail of dead and dying bodies for quite some time now.

I believe your online activity will come down to your interests, it means having a personality. You will end up in the bubbles that cattle to your interests. I've found this place because I was looking for a repository of PS2 games. I have many other interests like, football, racism, homophobia and funny animals.
I believe what really draws me to forums is the format. I'm old school, I don't like how the internet has been shaped by social media to become and advertisement platform instead of a medium for coms. Facebook completely altered the nature of social media with the heavy emphasis on profiling mixed with advertisement, transforming people themselves into products, commodifying relationships. Forums are entirely based on anonymity, which reenforces the value of the quality of your interactions and original content. It is not about who you are but what are you made of.
