It’s worth giving the original Digimon World a try, but if you aren’t interested in a V-pet game, Digimon World 3 is a good RPG, Digimon Rumble Arena 2 is an excellent Smash Bros.-esque fighting game (also check out Battle Spirit if you like this), and all modern Digimon games make great jumping-on points.
Every Digimon game is separate from one another, so don’t worry about playing in any specific order. If you’re really interested in the concept, I’d also suggest watching a few episodes of the original Digimon Adventure series to get a feel for the world and monsters.
