I think it depends on how tedious the limits make the game. If the limits force you to constantly stock up on or grind for it, then it probably isn't really adding challenge or immersion but just making things less fun. Limits should really be high enough that a game doesn't become a constant chore but low enough that inventory management becomes a consideration. It also depends a lot on the rest of the game and how important managing inventory items actually is for gameplay.
That really hasn't been much of an issue since 32 bit processors became the norm. The maximum integer limit for a 32 bit processor is 2,147,483,647. No human could actually accumulate even close to that many items in a game even if they played every moment of every day for their entire life. The average human lifespan is only 2, 200,000,000 seconds long. You would have to increment an item once a second for nearly your entirely life from the moment you're born to reach that number. And the limit for 64 bit processors is 9,223,372,036,854,775,807 which is an unimaginably huge number.Well there will be issue with how much the game itself can store the data.
But i mean if we take the limit of an integer 999 wouldn't hurt your processor at all.
And also why in the world will you need 999 potions. Just be honest you rarely use those item
