Metal Gear Solid
Parasite Eve 1
Front Mission 3
Valkyrie Profile

Hard to say for sure.
Either Dragon Quest VII or Soul Reaver.
One because of the epic story, the other because of the artistic quality.

Although those are only my picks for now. There's a lot of PS1 games I've yet to play. So it's likely I've not played my favourite PS1 game yet.
