I was a Power Rangers & anime kid so actually picking A cartoon is difficult, and saying
Avatar the last Airbender feels to easy. Like duh its amazing.
Ah screw it.
Oban Star-racers. I own its artbook & blu-ray it's genuinely amazing. Great action, heartfelt story and an adversity to physical violence that never undermines the drama or feels like censorship. It's a great show, as most French-Japanese co-productions are and it's criminally overlooked.
