What's your Favorite Racing game from the 90's-00's?

I'm not into the racing sims like Gran Turismo.
I prefer arcade style racers and kart racers.

Super Mario Kart / Mario Kart Double Dash
F-Zero / F-Zero GX
Ridge Racer Type 4 and the 2 Ridge Racers on PSP
Burnout 3 and Burnout Paradise
