Silent Hill 2 Remake: honestly when this remake was announced, i was so worried about it due to Bloober Studio past and lack of Team Silent, but i was really happy with the final result.
Yeah a good friend of mine who loves SH2 was also super skeptical for this one said it was great too. Made me really want to try it out. Love the original.
Best Remake: RE1 (2002/HD Remaster). Just everything I liked about OG RE1, but more of it. Real Survival, Invisible Enemy and the Forest zombie sound atrocious, but even that's not enough to diminish my love for the game.
Best Remaster: Tomb Raider 1-3 Remastered. It was a toss-up between this and Doom I+II, but the latter had a bit of an unstable period, so TR1-3 gets the cake. It leaves the original games untouched save for some QOL changes, modern controls IF YOU WANT THEM, all three expansions, it's good shit. I wish the saves for the main game and expansions were separate, but that's a minor nitpick all things considered.

Mafia Definitive Edition.

Destroy All Humans 1 and 2.

No better time than now. Theres a mod group doing a remake of Blue Shift in it, and it's endorsed by Crowbar Collective, almost done too. Hopefully we get versions of Opposing Force and Decay as well.
Most of mine have already been mentioned, though I'll still mention my favorites:
Pokémon Heart Gold and Soul Silver felt like an improvement in just about every way from their GSC counterparts. Fire Red and Leaf Green are wonderful as well.
Metroid Zero Mission outright replaces the NES original for me, and the game is a joy to play. Samus has never felt better in 2D, in my opinion. (I haven't played Dread quite yet...)
I love Dragon Quest's Erdrick trilogy on both SNES and GBC! I'll mention that all of the console versions of these games are a delight. DQ2 is not for the faint of heart, though!
Kingdom Hearts I and II in particular enjoy the Final Mix additions and more QoL features. They look great, and finally there are no load times when changing drive forms! My only criticisms are a lack of some extra toggles, like having the original audio and colors of the Heartless.

Sid Meier's Pirates. The 2004 remake is stellar. Yes, remakes have been around for far longer than most people think and Pirates is far from the oldest one.
speaking of old remasters, im a huge fan of the SMT1 remaster for the ps1. i played both the snes and the ps1 version and the difference hit me like a truck. as soon as i saw the mc's room my mind was blown. i consider it my favorite remaster and im glad they managed to up the post apocalyptic atmosphere in the ps1 version.
Terry's wonderland 3d. It is one of those games that are very close to perfection imo. I'm so glad it received a translation patch.
Another one would be ratchet and clank HD remaster.
I’d say Stranger of Paradise: Final Fantasy Origins because it has no cares at all for what a “remake” is even supposed to be. I love FF1 - the GBA remake was the first FF game I played to completion. But I didn’t need the same experience served up to me again.
Stranger of Paradise pours whiskey all over Final Fantasy 1, lites it ablaze, and rams its head through the damn thing to wear it like a flaming bandolier. And it is GLORIOUS in how little it feels the need to hold any of it back. This game kicks doors down just to go the bathroom. It steals cop cars for funsies. It says, “hold my beer,” and shoves an entire keg into your chest so it can skydive into an ocean of dynamite.
This game is utterly unconcerned with being a faithful adaptation, in its mechanics, characterization, storytelling, tone, even its entire genre of game. It is its own game, with its own message. And that message is, “Bullshit, fuck you!” and I will never stop loving it for that. Rock on, Stranger of Paradise, you weird goddamn freak.
RE1, RE2, RE4 all had excellent remakes (Sadly, there's never been a RE3 remake)
MGS:TTS (Yes, it counts. It's wildly Kojima'd, but it's still a remake of MGS1, and unless you're some boring dullard who can't accept the wild shit that goes on, it's a good one)

I can say, off the cuff, something I fucking CANNOT stand in terms of "Remasters", is when the "Remastered" content is hardly noticeable at all. (See: Spider-Man Remastered, Red Faction Guerilla: Re-Mars-tered, etc.)...unless, like, it's higher-res models/textures, and better optimization, I just feel like most of them fall into the "Why isn't this just an update patch?" category.
The only things I fucking HATE about AC:F are the combat scenes and the soundtrack. Like, the original played as it should - each combatant has their position, stays in place except when attacking.
AC:F - Enemies? Stay still. Characters? RUN ALL WILLY-NILLY like they got somethin' wrong with 'em. It serves no strategic value, it's just like...some cheeky developer was like "Look what I can do!" but never removed it from the game prior to release.
And, I feel like the soundtrack of the remake is a severe downgrade. It feels too...softened, y'know?
Like, this doesn't make the game *terrible*, but it does kinda make me prefer the original, even if having additional characters to play as made it a bit more interesting.
