Voice lines that have stuck with you

Like, every other line in Resident Evil 1, especially everything Barry says.
"WHAT is it?"
"Just Take. A. Look. At. This!"
"It's a weapon. It's really powerful, especially against living things"
and of course "That was close! You where almost a Jill sandwich"

This sounded so cool in 1993, a time when most games had little to no voice acting:

"Emergency, emergency. Incoming enemy fighters, prepare for launch."

"HAHAHAHAHA!" - Tidus

"You probably shouldn't laugh anymore" - Yuna
 
Darn, I missed out on a good thread... but RE4 & Valkyrie Profile were mentioned so all is good!
And also these, when I saw some gameplay because I've not played the game: "Come to my side, my noble Einejars" and "Nibelung Valesti"

VP2 is actually a great source for quotes too but there's like barely any videos on youtube for this, so weird. I still remember Rufus's "Aim for the head to finish it quicker" quote even after all these years! The joke being you're playing a jrpg & can't really aim for the head.
