This might be a dumb question, but should I try and play mgs3 without pressure sensitive controllers?

Not reccomended IMO, 3 and Sons of Liberty has pretty neat features on letting you slide though enemy lines by virtue of "barely press the stick to move slowly", in a Stealth game, practically a mandatory feature, also being able to rapidly unequip items and weapons with a bare tap of the triggers is a neat feature
 
I played it once, and I wouldn't recommend it. I did it by using a combination of aiming and unequipping the weapon to avoid shooting. Just remember that if you hold up a soldier and he sees you unequip your weapon, he will trigger an alert unless you grab him first or knock him out, or, well, kill him quickly. Other than that, you should be fine.
With that said, if you have the ability to play a more recent version (such as the one in the HD Collection on PS3/360 or the one in the Master Collection) go for it. It will be less frustrating, especially in the long run.
