But yes, an AI could absolutely become an Uber driver, granted it needs a bit more time in development. An AI would have connections to GPS, along with Google Maps, front-facing, and rear-facing cameras.

So, your argument is, in fact, invalid. As technology progresses, AI will indeed be able to replace most people for 99% of tasks. Maybe not in the next five years, but you do realize that on December 17, 1903, the Wright Brothers first flew. The New York Times had said a week earlier that "it would take humanity anywhere from one million to ten million years to invent a successful flying machine." And in just 123 years, humanity has progressed from that little flying machine to SpaceX.

So no, your argument that AI will never do this is, in fact, invalid.
Never underestimate humanity's push forward in technology, that will, in fact, eventually replace them.
