Without the forced motion Plus gimmick.

I was kinda dissapointed because it wasn't by RockSteady

Crisis Core Final Fantasy VII

I liked Zack but I kinda got tired of the milking of FFVII.

Better Call Saul and Monsters University.

I know the former has scenes that happens after, but the prequel part composes most of the show and remains unaffected if you consider just them.

Monster Inc. was good so was Uni.

But I'm a bit sad that Pixar went into making sequels and prequels of their classics without ever touching A Bug's Tale.

While the classic Pixar characterization is clearly present in that one, I wouldn't say it's a very deeply sentimental movie compared to the others. Not that this is a bad thing, but considering how Pixar is doubling down in that aspect with their modern movies, I don't have high hopes that they'll revisit it.

Devil May Cry 3 is often considered the point the franchise really started coming out on it's own, and introduced and/or expanded on things lore-wise that would become defining for the series moving forward, such as Dante and Vergil's relationship pre Nelo Angelo.

for me thats the point it started to totally change the tone, and not for the better.

I'll make this point though: all prequel characters are overpowered versions of themselves.

I mean Ben Kenobi is old, Big Boss became old by Metal Gear 1...

Many guys have an older age to justify why they're weaker.
