PS1 tekken 1 or tekken 2?

technically, you should start with the first one, and then go in order. it is very weird to go in reverse order or out of order. i ended up doing this with disgaea, and the first game will be the hardest one to play with out all of the adjustments, fixes and quality of life improvements.
i've seen a lot of people say tekken 3 is the best, but you will probably appreciate and enjoy the game more know first hand how much better it improves upon what came before hand.

i generally would agree with you, but this is a fighting game and Tekken at that, the story that is there is not very good. IMO

it's not just the story, the mechanics would be different as well. the best example of this is smash bros 1 and melee. there are no smash moves in that game. melee introduced them. it is very weird to play a game that removes 4 attacks from your list of offense options.

If you plan to explore the series as a whole, start with 1 and go from there. If you want to play the best game only, absolutely go for 3. (or if 3 really isn't an option - which it should be, that game's fantastic - make it 2)

Yea, pretty much what everyone said. I would go with Tekken 3 if you must play a psx tekken. I was curious if there WAS a reason to consider 1 or 2; I didn't think there was, but I am not a big fighting game fan in general (I'm really bad ;_;)

From a purely visual standpoint, if you just wanted to play an "early" 3d fighter, then tekken 3 will still satisfy that: it has that early "polygon" aesthetic (imo), but is just much more polished. Even tekken 3 doesn't look that great to me, but it is not bad. I just looked at some Tekken 1 screens and it looks ugh. Why wouldn't you want to be able to kick ass looking good?

Exactly. Also, if - for some hellish reason - you're somehow interested in experiencing the "plot" (in a fighting game), maaaaaaybe you're gonna want to play at least Tekken 2. A lot of major stuff happens on that one, which even connects a lil' bit to Tekken 8.

If you want to experience the full story and see the series evolve as a completionist, I’d recommend finishing Tekken 1 first before moving on to Tekken 2. However, if you’re just looking for fun and wondering which game is better, Tekken 2 is definitely the better choice.
