I wonder if there's a game similar to DnD that lets you go through dungeons, with roll chances and such.
I'm aware of Baldur's Gate, but I wonder if there's a "sandbox" type, or something with seed generated storyline.
 
Honestly, you're basically describing Neverwinter Nights. There's a massive, massive community of user-made campaigns, dungeons, (multiplayer and singleplayer persistent-worlds that rival MMORPGS), etc. It's an amazing game. There's also NeverWinter Nights II, which is more of a group singleplayer dnd which also has usermade campaigns and maps. Though, slightly smaller in community size than the first game.
 
I second Neverwinter Nights. Also Knights of the Old Republic, especially if you're a Star Wars fan. Has a great story and your choices all really matter.
 
Seed generated storyline... I can't think of one of those, no, but as for open world games - there's tons.

The Ravenloft Dungeon Crawlers (Strahd's Possession & Stone Prophet), The Dark Sun duology (at least if I remember correctly), Spelljammer (this one in particular is really open-ended), Menzoberranzan... the list goes on.
Which is to say nothing of the endless amounts of user modules for Neverwinter Nights, some of which allow you to generate dungeons for yourself.

EDIT: No wait! Dungeon Hack! That one is a full-on seed generated sandbox, if I remember correctly. No "real" story to speak of, but still.

i think pathfinder kingmaker, pathfinder wrath of the righteous and solasta(with dlc's) are good rappresentation of the game if you don't mind modern era games, i remember there are other modern like Knights of the Chalice 2 and 1, but i don't recall all the names right know, also for old school ones i would suggest Wizardry, can't think of anything that have a completely random generated storyline, maybe warhammer quest 2 (i played the first one but it seems is not on sale on steam anymore) but it's more like a lot of dungeon quest in sequence than a story from what i remember
