It is hard, but very fair and manageable. You can always grind for more levels or summon another player to help if needed. I was intimidated by it before I had ever tried it, then bought it in a Bandai Namco bundle, and it ended up being my favorite game. Be prepared to die often. If you can find a good deal on one of the games I say do it!
I think everyone should try the Souls games at least once in their lifetime, however be fully prepared for the reality that they might not be for you. I know the internet tends to treat them like these games that are so high art that they do nothing wrong and it's YOUR fault if you don't like them. The philosophy and merit of the Soulslike genre is one that might be very frustrating to the casual player, and there's nothing wrong about being a casual player
Ds1 is worth a shot, but don't be too reliant on the shield. Better off dodging and going on the offensive than waiting to block a blow only for it to leave you at a disadvantage.
Basically play it like Bloodborne, which has no shields. Ever.
If you can beat stuff like Castlevania, Ghost and Goblins or the first Zelda without problem go ahead, but overall i stay far from them, that said you don't get Pause button, not even in Offline mode, so you better empty your agenda before playing
