I played two "God Eater" but the second felt "more of the same" with maybe some QOL improvements.
I played GEBurst on psp twice, first time with cheats and second time without, I cared so much for the characters, I liked them and their stories; I was excited about GE2 on Vita, but in the end I didn't really care for the story (I finished it because I liked the gameplay).
 
Half of Metal Gear Solid 2: Sons of Liberty is a somewhat remake of Metal Gear Solid, which is a remake of Metal Gear 2: Solid Snake, which is also a remake of Metal Gear (all from the MSX)

Kind wild how he get out with it. But I forgive Kojima because MGS3 is just to perfect.
 
If we go more by a reimagining angle, definitely Earthbound to Mother 1.
Silent Hill 2 also feels like that, sharing several themes and a very similar vibe as 1, principally early on.
Also Final Fantasy V feels like a reimagining of I.
