"Tales of Ba Sing Se" - Avatar the Last Airbender
 
The Christmas episode of Hey Arnold.
The Rugrats episode about Chuckie's mom.
Several episodes of Futurama, but the true finale and royal jelly come to mind.

- Rick and Morty, particularly Morty's Mind Blowers, Look Who's Purging Now, A Rickconvenient Mort, Never Ricking Morty, The ABC's of Beth, The Whirly Dirly Conspiracy, Meeseeks and Destroy, and Mort Dinner Rick Andre.
-Adventure Time, especially the Mortal Folly, Mortal Recoil, I Remember You, Simon & Marcy, You Made Me, and the Too Old episodes.
The Amazing World of Gumball, paticularly The Heart, The Joy, The Stink and any of the episodes that deal with Rob and/or the cosmic horror aspects of Elmore.
 
Club Spongebob (Do I really need to say what show this is?) is still the one cartoon episode where I laughed the most.
 
It's already been mentioned, but some episodes of Hey Arnold! are very touching. It was a pretty special show for its time.
 
Steven Universe's Say Uncle: Probably one of my favorite animated episodes to come out of the past 15 years. Remarkable shitpost and self-parody of what are probably two of the most divisive animated series to come out of Cartoon Network (Uncle Grandpa is getting a critical re-evaluation, though, which is completely deserved.) Can you believe people hate this??

Krusty Krab Training Video (does it even have to be said?): I am one of the few people on Earth who loves just about all of SpongeBob SquarePants, even the widely reviled modern era (it is not nearly as bad as seasons 6-9) but if I had to pick just one episode, it would be the aforementioned KKTV. Encapsulates everything about why the show is beloved and is a perfect way to introduce the show to someone who has inexplicably lived under a rock and has never seen a single episode.

Run out of things to say for these other ones, so... The Simpsons Halloween Special (aka Treehouse of Horror I), Family Guy's And Then There Were Fewer, and the entirety of Clerks: The Animated Series. (It's only 6 episodes, I can count all of it!)
 
Avatar the Last Airbender - The phenomenal series finale

Primal - Several great episodes and only one stinker (the season 2 finale). I like The Primal Theory, The Night Feeder, and Terror under the Blood Moon. Show was on its way to being a masterpiece until that season 2 finale ruined that.

Rick and Morty - Rick Potion No. 9 (the first episode to really shock me and make me feel something) and Unmortricken (the most epic episode and the one where the show's lore really comes to a head)

Justice League - Starcrossed. It feels like an epic movie and really makes Hawk girl a truly compelling character

Justice League Unlimited - Flashpoint, Panic in the Sky, and Divided we Fall are peak JLU. Panic in the Sky is one of the most action packed episodes of the series and also features one of Batman's best moments. Divided we Fall is a must watch episode for any fans of The Flash.

Axe Cop - An American Story. The best episode. Absolutely hilarious.

The New Batman Adventures - Mad Love. A disturbing look at the Harley/Joker relationship

Green Lantern the Animated series - Loss and Cold Fury are the two most emotionally powerful episodes of the series.

Ducktales (2017) - There are so many it's hard to choose. The Duck Knight Returns and Let's Get Dangerous episodes brilliantly reboot Darkwing Duck. Quack Pack is brilliant and the last two episodes of season 1 are really strong (Last Crash of the Sunchaser and The Shadow War). Astro B.O.Y.D. is an excellent anime inspired episode and The Rumble for Ragnarok is a treat for pro wrestling fans.
