Know of cool game music that never made into the final products, or its not in the OST, or by some reason its really unknown compared to the rest of the soundtrack? Post it here!

I'll start with a few ones that come to mind:
Rayman 3 had quite a few of demo cds, one of then played a particularly annoying short loop nowhere to be seem in the final game for the whole stage, but what is interesting is that the short loop was meant to be solely the "waiting" version of the song that played before the battle actually starts and the actual song had two more longer and more complete variations that simply never trigger. It's a very experimental track that really fits with the "fighting in a patched together clockwork esque outpost", but I can see why ubi may have felt its too strange even for a game such as Rayman 3.

Sound test track hidden in SMT Nocturne files. I don't know if it eventually made to one of these thousands of atlus extra premium soundtracks, but its still amazing Shoji Meguro would put this level of work in a "sound test" that wasn't ever mean to be used in the final game.

Ross Scott has released both the RAMA soundtrack on CD quality (it was never officially released) and one of the songs from the Still Life soundtrack that the composer handed to him. I think that's really cool. Links to both are on the description of his Game Dungeon episodes.

And that's the last time we've seen Rayman 3D (other than re-releases)
I don't know if Ubisoft will do another one but the canceled one (Rayman 4) is being worked on by dedicated fans

While it's a cool initiative, I feel like its a project doomed from the start. Rayman 4 is waaay too ambitious (it looks like it wants to be 10x bigger than 3) plus it was cancelled very early on, there is not a single fully completed stage, very few music and enemies, etc.

And the other problem is the idea itself, the rabbids just aren't interesting enemies. Punching these annoying identical minions wearing silly costumes in a party game works, but a huge 3d platformer dedicated solely to then? Do they really still find the DAH joke funny?

I don't know if they found it funny or not, but I would like to see some progress
And I agree, there should be at least a better or more interesting enemies than just...them

A great unused Killer7 track that eventually showed up in a completely different game, beatmania iidx

Similarly this very unique piece from we love katamari demo that never made to the final game eventually made it to the rhythm game taiko no tatsujin

I can think of a few specifically.
These 2 are probably pretty famous, technically some versions did have them, but not until the ds version at the earliest.
Chrono Trigger "Battle Theme 2":

Chrono Trigger "Singing Mountain":

These last 3 are from Metal Gear Rising: Revengeance, some only had changes done to the songs but the final one seems to have been completely removed in any form.

Collective Consciousness (original mix):

A Stranger I Remain (Original Mix):

This one was mostly remade before release, though it seems to been meant to be like a stranger i remain, a part of "rules of nature" that was cut before the game released, likely for the first fight with metal gear ray:
"Locked and Loaded (Original MG Ray Track (vocals start at around 2:10):

One of my main gripes with Chrono is how repetitive the main battle music can get. Still can't believe they let that theme go unused. Had completely forgotten about Singing Mountain though.

If i remember correctly the track was supposed to replace the battle theme as soon as you go to 12000 bc, but i could be wrong, no idea why they didn't use it as it's in the game files of the original snes version.
As for singing mountain, it was going to be used for a never finished dungeon in the prehistoric times, i personally think it would have been perfect for death peak (especially considering the ingame context of that area).
