Is the Panzer Dragoon remaster worth playing or should I stick with the original Saturn via emulation? I really want to fully play through this game sometime!

Panzer Dragoon emulation have a lot of graphics problems.
The remaster isn't the same as the OG game but it's not a bad way to play this great game, just remember in what year was launched this game and judge it with this in mind.

REZ

REZ on PCSX2 looks great and probably upscales nicer than other PS2 games due to its clean geometry and vector-based aesthetic, but I'm curious how it compares to the official HD remaster, REZ Infinite.

I know remasters sometimes lose some of their visual "soul", so I'm wonder if enabling all the bells and whistles on something like PCSX2 would provide a better experience than the remaster. I would love to see a comaprison between the two!

I've played REZ Infinite and its literally a 1:1 port of the original. I'd say get it while its on sale, that's what I did. Now I have it on PS2 and PC
