Baldurs gate 3
FF vii rebirth ( add remake too )
Stellar blade ( yes the gooner game )
Every resident evil game on it ( yes re 3 remake included you can get it for cheap )
Dave the diver
Hades ( I think it's sequel it's not available yet )

Demon's Souls Remake, despite the fact that it is a remake, it's so transformative while extremely faithful that there is a reason to play it for any hardcore fan or novice.

Ghost of Tsushima is the best samurai-era sneak-em-up since Tenchu, assuming you want to play stealth and don't just hack your way through Mongol camps.

My son who's better at Souls-likes than me says that Bloodborne performance is better on PS5 too, so there's that.

Kunitsu-Gami is such an interesting game. The environments are physical dioramas; the music was recorded in a field to make it sound more appropriate for the environments (the different town music is amazingly beautiful); it's based on ancient Japanese myth and history; the art style is really striking and sometimes jawdropping.

The gameplay itself is a bit of a Pikmin tower defense that offers a good amount of choice in how you approach each mission (especially when you've acquired more units). Plus, it's got a great NG+ mode.

It's one of those kinds of ideas we used to see a lot of on the PS2 and prior. Some dev has an idea they want to explore and they deliver the best version of that idea. It wasn't crafted based off of industry trends or to maximize profit. It's just a complete idea that is unique from most other things available right now. I can't recommend it enough.
