PlayStation 2 games with Dark Knight class?

Or don't :) If you can see its plot without prejudice and without expecting a "classic" or very serious or old-school Final Fantasy, it's nice, at least I liked this game along with FFX. But then again, it's all about personal opinion, so you should read some review or watch some gameplay because lot of people think it's bad.

Also, will a Shadow Knight be okay? (from the ps2 "Odin Sphere", though it's also on other console with the remaster)

Hell yes. i love Shadow Knight from Odin Sphere. I still need to play it though, just saw some screenshots and liked the design.

If you're asking just for ps2 games because you don't own newer consoles, it's totally ok (I've 100%ed Odin Sphere on ps2, I bought it day-one, if I've been able to beat one of those final bosses anyone can do it!!). But if you can play on Vita or ps3 know there's a remaster: I don't know about other differences, but surely they've improved the battle system (easier combo and more fluid combat). And in the remaster I think you can choose between classic mode (ps2) and newer mode, so you would not miss anything.

FFX-2 is nice until all the Vegnagun nonsense happens and I just lose my shit.

Actually, the PS2 is my only favorite console, haha. I used emulators on my PC up to RPCS3 with no problem, but it's not the same; I prefer a real console every time.
I know about the Odin Sphere remaster; I played it for a while in the first and second areas/levels with RPCS3.
