I was discussing this with some of my buddies at work. Pinocchio's nose grows when he lies, but how does it determine what a lie is? Does Pinocchio's nose determine the truth by what is Objective truth or what Pinocchio believes to be true. And could his sniffer be used to answer philosophical or scientific questions?

I would say the answer is no. It seems implied (in most stories) that it is only based on what he knows.
If he ate a burger, but said it was a pizza, it grows.
If he says he sleeps at 8:00 pm, but wasn’t aware that his clock was broken, it wouldn’t grow.
 
My knowledge is based off the Disney film, so feel free to correct me if I get the lore wrong.

Pinocchio's lie-detecting nose is a product of the Blue Fairy's magic. Her motive for placing that restriction on him is to test whether or not he's worthy of her gift of life as a real boy. As such, his nose grows when Pinocchio intentionally lies about things when he knows the truth. In other words, his nose is a measure of his character more than his grasp of philosophical or scientific truths.
 
His nose growing is just a metaphor of the consequences of telling little white lies until it grows into something that can affect things. Don't know why this is just a discussion? Making interpretations of something so simple.
 
Is there a limit to how long his nose could grow? Could it get to the point where it's like a mile long? Forget about work as professional lie detector, he could create endless wood and end deforestation.
 
If his nose gets too long can he saw it off? Does that hurt? He doesn't have to worry about blood loss right?
