So this is solved by switching to emulator from what i read.
To play on console in the language you want you have to set the bios language to it. As other have mentioned before me.
Every PS2 has a bios you can access to without inserting any game, in there you'll find language options, change it to English. Not in game.
A bunch of games do not have language selector and depend on the bios setting (lazy ass devs).
