I've also always preferred manga over animes tho some adaptations cannot be ignoredBe honest, I actually prefer Manga to animes. I'm sure LN would be even better, but it is hard to find fan translation of those.
I haven't really mentioned but I feel like Chainsaw Man, specially the first part, is plenty of liminal shit... Other than this, I feel like Seinen manga is the genre most commonly doing this kind of approach, I remember reading Inuyashiki and getting really excited with the development also bc of that...
