I assume this is a DVD image (or PSP UMD) since you say iso.
From terminal:
chdman createdvd -i "(game).iso" -o "(game).chd"
If it's for PSP, add "-hs 2048" for best PPSSPP performance.
If it's a CD, use "createcd" instead.
chdman is part of MAME package, I assume whoever manages it on Mint includes it in the repo.

It's basically an automated script for chdman and is extremely easy. When I download a new PSX or PS2 game I just leave it in my "Update" directory. I right-click in the open folder and select "Open in Terminal", then I type:
tochd .
Note the space and period. This tells the software to convert any compatible files in the directory (or unzip and convert) to .chd files. No fuss or muss.
