Kobayashi-san Chi no Maidragon is up there in terms of fluffiness and quality, but it's more like fantasy people came to our modern world kind of fantasy
Mahou Tsukai ni Taisetsu na Koto ~Natsu no Sora~ is, by now a long-forgotten and super niche anime but is a very important piece in anime history because of how anime used to be produced back in the day where experimentalism was still viable in the market
it's been a while but most of the anime, if not the entirety, had real photographs as backgrounds, and the characters were just animated on top of it, so you get to take a peak at japan back in the mid 2000s, it's also quite questionable as "fantasy" but she IS a magic-user, technically ?

i recall watching this weird spin-off of Shingeki no Bahamut called
Manaria Friends and it's basically a yuri fantasy school slice of life, and it may be near the lower end of the barrel but it hits the "fantasy" and "slice of life" aspects spot on
Isekai Shokudou, as the name implies, is a restaurant, connected to a whole bunch of isekai's, so you get a whole bunch of fantasy people and creatures come in
Zettai Shounen is contemporary fantasy and honestly it's one of those early-mid 2000s classics that's just hard to describe because it's more of an experience in itself
