PS5 Is Demon's Souls (2020) necessary?

If only this didn't mean that you can only have easy access to one and not the other... Imagine if The Twin Snakes was the only viable way to play the first MGS on modern consoles or Mario 64 DS was the one over its N64 iteration being playable on all Nintendo consoles since the Wii...
You can still easily access all of those games, either in an official or an unofficial capacity. Sure, it would be nice if every single game in its original form was available on later platforms, but there are options.

All that being said, I never really expected the remake to add any of the missing content. FROM themselves didn't bother improving anything other than the visuals, FPS, and one bonfire with Dark Souls Remastered, why would Bluepoint be any different?
I understand your reasoning, but from a marketing standpoint, wouldn't adding cut content be a huge win for the remake? You'd think Sony would want to take an obvious win and add the now-mythical Northern Limit back into the game. Otherwise it's just the same game, but worse.

Demon's Souls is easily accessible in an unofficial capacity, too. RCPS3 recently had an update that upped performance and optimization by something like 50% of the original PS3. My potato of a laptop can run it at a smooth framerate without overheating.

I'm with the other people who say that maybe the remake should have just been a port with some performance improvements. I'd say differently if they added anything new to the game of substance.

It's not always obvious, but the vast majority of the gaming space is running on extremely tight budgets with extremely tightly-defined goals - it's honestly impressive what some groups do with the minimal resources they get allocated. Remakes fall into this camp even harder because lots of the coding and writing is already done, and part of the marketing is done too thanks to name recognition... So it's very rare that a remake genuinely redoes the entire concept of something. We do get them sometimes - the recent Persona 3 Reload is a pretty big shakeup of the original game. Other times we get more of a touchup with some added content, like Scholar of the First Sin...

...But Demon's Souls was handed off to Bluepoint, the studio explicitly known for remastering. After their debut mini title, they never made a single original game, and their remasters never added a single piece of meaningful new content. And if FROM was content to rerelease their masterpiece Dark Souls without doing a single thing to improve the game's horrible third act, then there was no way a studio that only knew how to make games slightly prettier was going to give us the Northern Limits.

TLDR, brand new things cost more than repainted old things, and Bluepoint were painters, not architects.

That's what I meant (especially regarding 7th gen games).

It's really sad that neither the original Demon's Souls nor BloodBorne got proper ports.
