Imo I feel the Streets of Rage franchise (4 if I'm being specific) would of loaned itself well to the arcade environment. Beat em ups are tryed and true but add the button input special moves and weapons in a destructible environment and it sounds like a sure fire hit to me. While Final Fight has strike sponges that take forever to defeat I always felt SOR had a great balance of endurance and hp pools. Not to mention objects that the screen holds due to SOR looking more scaled back in size loaning to more screen real estate.
 
Shredder's Revenge, this game is pretty much an arcade title.

...Nah this is too boring for an answer, let's spice things up:

Pizza Tower could me more arcade inclined if the game was divided into smaller levels and there were time limits from the get go. The main character charisma would have definitely attracted a lot of attention.

...Still too normal of an answer. Alright HEAR ME OUT:

What if Phoenix Wright had an arcade game? It would focus on the courtroom side of things and the dialogue would get to the point more quickly. There would randomized case elements, and the player would have limited time to figure out the correct answer. The HP system would make a lot of more sense at least.
 
Macross DYRL on the PS1

That game honestly feels like the side scrolling shoot em up, 32-bit equivalent of those kinds of shooters as symphony of the night was to 2d platformers. It's perfected the look and feel so well, but was overlooked in it's time due to not being 3d.

Macross DYRL stayed in Japan, though nothing was stopping anyone from releasing it at that time in the west, so laziness I guess.
 
I always wonder why Nana-on Sha titles never came to the arcades. They were the only kind of company who could’ve messed with Konami’s iron grip on arcade rhythm games.

Imagine a Parappa machine with these large PS buttons, using that PS1 arcade board that Namco has.

Dude, just IMAGINE if there was this tight time limit to pick your evidence and to find points in the evidence, so it’s the most exciting, “coming down to the wire” part of the cases, but in game form.

AND IMAGINE AN ARCADE STYLE RENDITION OF THE CORNERED THEME! Imagine that pounding in your ears as you reach the finale of a case!

Imagine if you had this big track ball made of rubber, and it had a bunch of junk from the game inside it?

This is a great pick, I forgot all about Motorstorm. I could see this being a big hit like in a movie theater lobby.
I wish Sony didn't forget about motor storm 😆 I was so ready for a new one on PS4... Instead we got drive club 🤢 and then Sony shut the studio down.... INSTEAD OF HAVING THEM JUST MAKE A DAMN MOTOR STORM GAME ON MORE POWERFUL HARDWARE...

But specifically base it on something like this:

Dinosaur King arcade cabinet. Every time you played you were given a card that you could swipe in. The moves from battle network would be collectible cards and at the start of the game both players would swipe in their decks (it's a head to head game obvs). Maybe the winner could even get an extra card as well. On Dinosaur King only one card was given at the start so we kinda house rules'd that the winner got to keep it

edit: I don't think I made it clear, the dinosaur king game is a deck builder sorta thing but the cards you have are irl
 
Maybe Sonic the hedgehog, by both reaching the end the fastest way possible AND getting the highest score.
F-Zero games and Star Fox too
 

Monaco: What's Yours Is Mine was such a blast to play with other people, and the weird mix of stealth mechanics, arcade sensibility, and Pac-Man set off my need to speedrun every level like few other games ever have.

Probably a more obvious one but definitely Catherine. Any game mode is basically perfect for the format of an arcade game.
 
Dark soul would make every aracde owner rich a good game where people die so much it would rain money.
