In so many video games, the back of the box will say “face giant bosses!”, but how many of these enemies feel truly huge? Presentation of an enemy does a lot to big up its size, and with great camera, lighting, and sound work, you can create an enemy that truly has a giant presence in a game.

For me, the boss that best suits this is Trypticon from Transformers: War for Cybertron.

What truly makes this impactful is not just a brilliant combination of all that we just said, but also the fact that most of the game’s storyline takes place because of the Trypticon Space Station, which we attack the internals of in the previous mission, only to watch as the station itself transforms into a monster that we have to fight, both in space during the penultimate mission, then on the ground in the final mission. This game in general does a great job of emphasizing scale in its rooms and locales, so having a giant enemy only makes sense.

It's likely that the phrase is simply meant to be taken figuratively, in hopes of grabbing the attention of the consumer. "Giant" could just be another way to say that the bosses are powerful, unbeatable, or some other identical keyword. That's my view, anyway.
 
A very obvious one, but I have to mention "Shadow of the Colossus." The journey of finding the colossus and seeing them all always made me awestruck, and you truly appreciate how big they are as you watch them interact with the world around them and climb them.

Also shout-outs to "Armored Core: Fires of Rubicon" you are already controlling a giant mech yourself, but you come across bosses that are bigger than anything I would have imagined fighting in this game.

Love'em, feels like you know you will have either a great time or a long time to battle, but feels awesome after defeating them, especially the battle against 'Asura's Wrath' and "Metal Gear: Revengence".

Mundus in DMC1 felt massive and intimidating as hell.

The weaponized mining ship from Armoured Core VI: Fires of Rubicon was so gigantic it's hard to find photos of it where players have travelled far enough away to picture the whole thing.
 
galactic emperor from gotcha force with the size of a continent, and to top it all off he fells especially big because you play nearly the entire game as toy sized robot/aliens.
 
Bowser from Bowser's Fury was a really cool take on the typical Mario formula. By all means it's a normal Mario 3D world level, just alot more open, and you have to deal with the huge Bowser giving you shit in the middle of the archipelago. Bonus points for how sick he looks.

That awful Ubisoft BotW like, with an awful name, Immortal : Fenyx Rising had you fighting and Hydra, and it makes you think it is going to be a huge monster. only to be piratically a chibi version of it

And you only battle the heads, Making it seen that much smaller, it is also a boring, long and easy battle.

I am not the biggest God of War fan, but they made so much better in 2005. (More than 15 years before)

 
Most really giant bosses usually fought in phases, or you only fight the smaller parts of the bosses, or just gauntlet match where your actual objective is getting to a specific switch to kill the boss. I appreciate games where we actually fight the boss like Shadow of Colossus.
Anyway, here is Mother Brain from EDF 4.1, how large is the boss? It spans across the entire skybox.

In Monster Hunter 4 Ultimate, Dalamadur is described as being the size of a mountain and the game is not exaggerating. This thing is so huge, you will never be able to see it entirely on-screen.

 
Shadow of the Colossus is often the first game I think of when it comes to giant enemies.

Obligatory. They absolutely nailed it.

The funny thing about OoT Ganon is that he really does 'feel' huge. This insurmountable, hulking monstrosity that leaves such a lasting impression... but he's actually not even very big. He's around the same size as Gohma, and way smaller than several bosses in the same game. Goes to show presentation and 'feel' are a lot more important in this regard sometimes than actual technical size. I remember back in school kids would argue he was like Godzilla sized, and I always insisted he was much smaller. Drove me crazy. lol
