I'm big fan of Suikoden 5/4/2Live a Live is the granddaddy of all these type of games.
Eiyuden Chronicles is the spiritual successor to the Suikoden series, so checking out Suikoden 2 would be a good idea.

There is a game that caught my attention; it is called Grand Knights History. I have never heard of it, but the style is fantastic.Octopath was made with a fair bit of similarity to the SaGa games, like Romancing SaGa on the Super Famicom or SaGa Frontier on the PSX. Might scratch that itch for Octopath Traveler. and there's a recent remake of Romancing SaGa 2 that I've heard good things about.
Suikoden was already mentioned, the first two in particular are what Eiyuden Chronicles was intended to resemble, so the upcoming Remaster in a few months might be of interest too.

You don't put untreated sprites besides super high definition upscaled backgrounds, much less with that insane amount of ridiculous post processing.
My personal take, but yeah, the PSP remakes hold up really well. There are more advanced remakes these days, and they change stuff around, but I don't like how they look, so it's up to you. SO3 is... ehhn... I haven't played anything past 3.I really wanna get into Star Ocean games

Yeah VP is a gem. I never played 2 much, though. Glad it holds up. I like Covenant of the Plume too, even though the style is completely different.I'd suggest the Valkyrie Profile series, specifically 1 & 2. In terms of narrative, looks, good music & gameplay depth, it's pretty similar in overall mood & what you want from a game. There's even an emphasis on recruiting multiple characters if party customizing is your thing.
Now I'm not saying they'll be exactly the same, but at the very least, by playing Valkyrie Profile you'll be treated to a genuine good story & some pretty addicting gameplay. VP2 in particular is also one of the best looking games on the PS2.
